She received her Ph.D. degree from the Pharmacology Department of the University of Santiago de Compostela in 2001 and began working in UACJ in 2002 with a grant from the Mexican National Council of Science. She has been strongly involved in teaching graduate and undergraduate courses, she has supervised more than 40 undergraduate and graduate theses. She has also been involved in the formation and leadership of a research group in Food Chemistry and Functional Foods, where here main research interests are the identification of phenolic compounds in plant foods and study of their biological activity, mainly as enzyme inhibitors. From 2009-2010 she had a sabbatical leave at Memorial University of Newfoundland in Dr. Fereidoon Shahidi´s Laboratory, where she learned to use HPLC-MS for the study of phenolic compounds. She has been awarded and collaborated in several research grants from the Mexican National Council of Science and technology. She has been recognized by the Mexican System for National Researchers since 2002 Publications Phytochemical Content and Potential Health Applications of Pecan [ (Wangenh) K.
